To pull-to-refresh and manually refresh data from Salesforce while viewing a record or a record list, swipe down and then release when you see the spinning animation. If the app has internet connection it will retrieve updated data from the Salesforce Org.
A Pull-to-refresh action invokes a delta sync where only the changes since the last sync event are synchronised, please see more information this related article for more information on how delta sync works.
